Sodium bicarbonate, also known as baking soda, is a white powder that is commonly used as a leavening agent in baking. When combined with acidic ingredients such as buttermilk or lemon juice, it releases carbon dioxide bubbles which causes the dough or batter to rise. Baking soda can also be used in cooking as a raising agent, but also as a cleaning agent, a deodorizer and an antacid.
